That’s how an authentic red is made.
Our processing begins with these characteristics: research to find the best expression of the fruit and structure and rich flavour exalted by refining in wood.
GRAPE VARIETY:: Refosco dal Peduncolo Rosso 100%.
ORIGIN: Pramaggiore, our own vineyards.
SOIL TYPE: Medium texture, clayey.
VINIFICATION: The grapes are harvested by hand during the first ten days of October. Maceration takes place on the skins at a temperature of 28 °C for approximately 10-12 days in an innovative fermenter called "Ganimede", the main feature of which is an ability to accumulate the carbon dioxide developed during the must fermentation process. When appropriately released this will help to achieve optimum, homogeneous racking of the marc without mechanical aids. At the end of the fermentation process the wine is placed in 700 litre French oak barrels, where it will mature until bottled.
COLOR: Extremely deep red colour, almost impenetrable.
SCENT: The scent is strong and intense but elegant with marked hints of wild blackberries and mixed berries.
FLAVOUR: The flavour is soft and full, dry and definite, with well-defined tannins in a robust structure that lingers in the long end.
SERVING SUGGESTIONS: The strong structure and complex aromas of this wine make it ideal with feathered game, red meat, roast meat and medium to hard cheeses.
